In a time when the 24 hour news cycle is a constant reminder that the world as we know it has changed, we’ve taken to collating a list designed to uplift. From simple snacks to positive stories from people around the globe who are learning to adapt just as we are; to a playlist of our fav feel good songs – we experienced so much joy in sharing this among ourselves and we hope you can find some too.

  • Pub Choir’s ‘Couch Choir’… With pubs closed across the country, they had to adapt their model to social isolation - nothing quite like harmonising to get me in the feels and I'm signing up for the next one! - Kaitlin

  • Houseparty App - This week I am so grateful for this app which enables you to link in and FaceTime with a group of friends - be it 2 people or a group of 8. I’ve been able to chat with my beautiful girlfriends from Melbourne - together we've laughed, caught up on everything happening in our lives, and even enjoyed a wine together! We got much needed giggle and it was just as good as hanging out in the same room (if not better; most of us have been chatting from bed) - Kim

  • For my daily inspiration and grounding I go to my favourite Jaqui @thebroadplace. So much infinite wisdom applicable to our overstimulated busy minds. – Danielle

  • Keeping active and also laughing along as their dogs are doing /interrupting the session with them (like mine do!) with free live workouts every day on @keepitcleaner. – Kaitlin

 

4 SIMPLE RECIPES to SPARK JOY (EVEN WHEN EATING SALAD)

 

RAW SALTED CARAMEL FUDGE

The ultimate healthy indulgence recipe that I got from my sister and bloody easy to make!! - Danielle

Ingredients: 

1 Cup Nut Butter

2/3 cup of melted Coconut Oil

8 Medium Dates pitted (I used a few extra)

1 tsp vanilla essence

1/2 teaspoon of salt

2 Tbs of Agave Syrup (or Maple syrup)

Blitz all ingredients pour into lined tin & freeze for 2 hours 

Slice and store in the fridge - yum!

RANCH DRESSING

A dressing can transform a meal from bland to grand. Not only for salads, but in these current times where we are being especially conscious of our food and making the most of our leftovers - be it roasted veggies, chicken, or even lettuce and herbs picked from the garden.... this dressing drizzled all over will reinvigorate the food to another level. My mum has been making this recipe since I was in primary school. It’s a crowd fav. -  xx Kim

Ingredients

2 egg yolks

2 table spoons of white wine vinegar

2 cloves of garlic, crushed

2 teaspoons of French mustard

2 teaspoons of raw sugar

1 teaspoon of ground black pepper corns

1 stalk of spring onion, finely chopped 

1 teaspoon of lemon juice

1 cup (250ml) vegetable oil

1/2 cup (125ml) buttermilk

 

METHOD

Blend or process egg yolks, vinegar, garlic, mustard, sugar, pepper, spring onion and lemon juice until smooth. Add the vegetable oil gradually and in a thin stream while the motor is operating to form a mayonnaise-like consistency. Then stir in buttermilk.

Voila!

NORI POPCORN / PAPRIKA POPCORN

Because snacks are crucial at a time like this and popcorn is my ultimate snack of snacks. - Rose

 

Ingredients:

1-2 tbsp of coconut oil 

1/4 cup of popcorn kernels 

pinch of sea salt 

 

METHOD: 

  1. Heat coconut oil in a pot with a lid 
  2. When oil is hot add in the kernels and place the lid on the pot on 
  3. Wait for the popcorn to start popping vigorously and turn the heat down to a low flame 
  4. When popping starts to lessen turn the flame off and allow the pot to sit for at least another couple of minutes 
  5. Throw in a bowl and add your fav toppings. At the moment my fav is with some broken nori on top. Other ideas: Paprika, Nutritional Yeast Flakes, Maple Butter, Cinnamon, Rosemary & Sea Salt

PEAR, GINGER & HAZELNUT CAKE

At the moment all I really want is comfort food and snuggles from my dog who is now bigger than the table and can't keep her head off it, or away from cake. I am not ashamed to say that I ate the whole cake by myself! - Izzy

Ingredients: 

Fresh poached pears x 3

150g toasted hazelnuts

125g unsalted butter

100g light brown sugar

50g treacle or honey

2 eggs

100g plain flour

1tsp baking powder

Pinch of salt

Handful naked ginger

1tsp ground cinnamon

1tsp ground nutmeg

Just mix all together - mix wet ingredients first, then add dry ingredients. Bake at 160 degrees celcius for 35 minutes. EAT IT ALL!
